A non-mortise hinge is called this because you do not need to mortise the hinge into the side of the door or cabinet. You simply place the hinge and fasten it down. It's a tremendous labour saver. It works this way because the hinge closes into itself as the picture here shows. It is recommended to joint a slight bevel onto the side of the door to leave a little clearance to the inside. This prevents the door from "springing" open should the heads of the screws not sit flush with the hinge.
